Coconut Date Rolls
Did you know there are more than 300 varieties of dates? And the list of health benefits this fruit carries is just as tremendous. Here is a very simple healthy dessert recipe made with dates, coconuts and walnuts. Enjoy one, two or three rolls with a hot cup of chai (tea).
And you know what they say...a date a day, keeps the doctor away!
3 tablespoons olive oil
2 cups shredded coconut
2 13oz packages pressed dates
3/4 cup chopped walnuts
1 teaspoon ground cardamom
In a heavy-bottomed pot on low heat, combine olive oil and pressed dates. Stir every few minutes until the dates are soft and well mixed with the oil about ten minutes. Add the walnuts and cardamom, then remove from heat. Cool mixture slightly then roll tablespoon size balls in coconut to shape into two inch logs.
