Refreshing. Simple. Healthy. 

Assyrian Salad                                                                             

Yields: 3-4 servings 



2 medium tomatoes, diced

1 cucumber, diced

3/4 cup onion, diced

1/4 cup parsley, chopped



1/2 cup lemon juice

1 teaspoon sea salt

1/4 cup extra virgin olive oil



Mix lemon juice and salt, whisk until salt dissolves. Slowly whisk in oil until well combined. 


In a large bowl add your ingredients and drizzle the dressing. Mix, taste, and enjoy!



a) If pomegrantes (armunyateh) are in season, add 1/2 a cup to the above ingredients, mix and enjoy!


b) Want to add the perfect crunch factor?! Preheat oven to 350°F, tear pita bread into bite size pieces, put on a baking sheet and toast for 10 minutes. Add to the salad and enjoy!
